This dry Blanc de Noir is unusual in various ways: It is made from 100% Cabernet Franc (a not so common cultivar for Blanc de Noir) and barrel-fermented, resulting in a complex style of Blanc de Noir (as opposed to the more usual fresh-and-easy style) and a serious food companion. Vinification | The grapes were hand-picked at 21.5 ballings early in the morning and then cooled down over night at 12 degree C. Very gentle pressing. Initially cold-fermented and then barrel-fermented. Matured in older French oak barrels for 11 months. | |
