A velvety and very accessible Cabernet Sauvignon from old vines of a certified Single Vineyard.
|Cabernet Sauvignon is a bold & classy cultivar often resulting in complicated wines with rich tannin. This Tanagra Cabernet Sauvignon is bold and elegant and yet very accessible. It has got rich fruit with a slightly herbal afternote so typical of all our red wines, and good but soft tannin. It is perfect to enjoy now or (at least) within the next 5 – 6 years.
|Vineyard||South-facing, slightly sloped vineyard at Tanagra (McGregor) on rocky Karoo soil and surrounded by Karoo fynbos and veld|
|Vines||3 ha planted in 1998, Rootstock 101/14. 10 000 number of vines trellised in a North – South row direction on a 5 wire system|
|Yield||4 – 5 tons/ha|
|Vinification||Early morning hand selected harvest to optimize grape quality at 24 ballings. Hand-sorting of grapes before destemming. Whole berries are pumped into open top fermenter (without any green stems) and macerated there for about 4 days on the skins, allowing cooled grapes to extract colour and phenolic compounds prior to primary fermentation. Fermentation through natural (wild) yeast as soon as grapes reach room temperature. Punching down of fermenting must 3 times a day until fermentation is completed. Fermentation on the skins until about almost zero ballings. Gentle pressing of skins and malolactic fermentation in 225 litre neutral French oak casks for 14 months. Done with minimal interference through vinification, sediment may occur.|

|Tasting notes||Dark purple colour. Aromas of cassis, eucalyptus, black currant and hints of tobacco. Rich fruit with spicy aftertaste lingering on palate. Solid yet soft tannin. Dry finish.|
